Housepoet's Famous Lactation Boosting Oatmeal, Chocolate Chip & Flaxseed cookies

Housepoet's Famous Lactation Boosting Oatmeal, Chocolate Chip & Flaxseed cookies ™

Ingredients :
  • 1 cup butter or marg
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 4 tablespoons water
  • 2 tablespoons flaxseed meal*
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups flour (if using whole wheat cut down to 1 1/2 cups)
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 3 cups oats, thick cut if you can get them
  • 1 cup or more chocolate chips
  • 2 tablespoons of brewers yeast* (be generous)

Directions:

Preheat oven at 375 degrees F. Mix together 2 tablespoons of flaxseed meal and water, set aside for 3-5 minutes. Cream (beat well) butter or margarine and sugar. Add eggs one at a time, mix well. Stir flaxseed mixture and add with vanilla to the margarine mix. Beat until blended. Whisk together dry ingredients, except oats and chips. Add to butter/margarine mixture. Stir in oats then chips. Scoop or drop onto baking sheet, preferably lined with parchment or silpat. The dough is a little crumbly, so it helps to use a scoop.

Bake 8-12 minutes, depending on size of cookies.

Serves: 6 dozen cookies

Preparation time: 15 minutes

*can be found at any local health food store.
*NOTE* IT MUST BE BREWERS YEAST, NO SUBSTITUTIONS.

I made these for a friend who's having supply issues and they were so flippin' good. You can feel yourself lactating as you nibble on them. ;) If you don't like chocolate, you can substitute for carob chips, raisins, butterscotch chips, make them savory with basil or thyme. Make them gluten free with rice flour and gluten free oats from Bob's Red Mill

My 3 yo was sitting on my lap and asked who the cookies were for. I told him "for mommies who don't make enough milk for their babies". He then lifted up his shirt and said "I need cookies, got no boobs".

They look great!

You've got 2 table spoons of flaxseed meal on their twice. Is that a typo or do we need 4 table spoons of flaxseed meal?

I can't believe you posted this when I have no kitchen. Seriously, no kitchen (except a fridge in my living room).
Oh well - I guess I'll have something yummy to break in the new oven with.

My first thought was "wow, I should make those" and my second thought was "My huband and his friends will eat them up on me" and that led into thinking "a house full of lacating guys would be pretty cool".

If I want to make a smaller supply (like 3 dozen :o) can I just cut the ingredients in half? I'm the only one lactating, and I wouldn't want anyone else to have them anyways, but 72 cookies alone is a lot!

[info]housepoet

March 15 2006, 01:49:19 UTC 6 years ago

ah, make the whole batch and freeze the rest in zip lock bags! That's what I alwasy do, and then I have cookies on hand when/if I need them! :)

Brewers yeast and flaxseed meal are cool when you're pregnant, yes?

Definitely think I will be making these before the week is out. I am running low on my More Milk Too tincture and they take bloody forever to ship when you order online.

Grazie!!!

[info]housepoet

March 15 2006, 02:26:55 UTC 6 years ago

I've never seen anything that says you can't have it whilst pregnant. That might be something I want to look up tho.

March 15 2006, 22:40:36 UTC 6 years ago

This is going to sound so lame and feel free to say no but if I gave you money for supplies and shipping and all that jazz do you think you could make me a batch and ship it out to me? I am so domestically challenged that it borders on pathetic. I'd really love to try them though, so let me know!

[info]housepoet

March 16 2006, 01:32:03 UTC 6 years ago

I don't see why not. The only problem is that I'm in the middle of college, planning a wedding, pregnant and have a 2.5 year old. So I don't think that I would have the time. I'm so sorry.

But really, normally I would totally do that. :)

I just made these and the first 2 dozen are cooling whilst the third is baking. They taste great! I used baking M&m's because they're magic cookies. If I don't stop eating them soon, my boobs wil explode with ilk overload.

[info]housepoet

March 17 2006, 13:41:41 UTC 6 years ago

I love them. I think I should make some more sometime soon.

mmm m&m's!

I accidentally bought active yeast for bread - so I ran to the local mead supply store to buy BREWERS yeast. I walked in and they said "are you making beer or mead?" and I said "cookies". Needless to say - they thought I was nuts. LOL

Making them right now. Fed one to my husband and he's scared he'll be lactating now!! hehehehehe

let me know how they turn out!
